Yes, you can find mines in ebps/races/german(Or soviet)/buildings/defensive_structures And you might need to assign them for a player and give him a team in scenario/teams

I take it you mean in world builder. Lokking in the 'objects' - 'ebps' -'props' -'choose faction' -'buildings' -'defensive stuctures' -'select mine type'. You can also find warning signs in the same section.
I havent tried these out but my geuss is for a multiplayer map you would want the ones that end in '_mp'. I would suggest testing them out. Some of the mines dont show up when placed but can be selected if you click and drag mouse over the area. I.E. Riegel_43_mine

If I remember correctly, from COH(1), mines assigned to world blow anyone up, either team.
