The MG42 is a curse and a blessing. Its a great lockdown tool, yes, but Grens can't really compete with Rifles and Tommies without it. Its usually pretty easy to predict where the first MG will be, so its just a matter of getting there first and turning their building against them.
The faust comes early since it was intended to counter the M3. The only thing wrong with faust is having 40% more penetration over AT 'nades for the same cost (100 vs 140).
The rifle-nade is fine. Like any other grenade, you just have to dodge it.

MG42 build time was increased to compensate for this iirc. I don't think it actually comes out any faster than it used to, just lets you get it while skipping t1.
Panzerfaust doesn't negate light vehicle play. It just deters you from steamrolling them. Keep in mind that ostheer can't build an AT gun or handheld AT until 60 fuel. Every other faction has one or the other much earlier. (Bazookas for US, Zis for Sov, ATG for Brits etc)

1.I was focusing about the Wehr early game.
That all allies ever do.
Game is balanced, L2P
3.Telling me to dodge is pointless since if it was being shot at a MG garrisoned building, the animation is still faster than the ungarisoning. It could be dodged by infantry no problem but it has no delay so MG's are goners.
You have smoke.
Also, have the option to to run directly into MG fire.
FLANKING is key.
