I bought WFA not through steam but another retailer. I will get the key emailed to me when the game is however, released.
Will I get the bonuses (skins)?

So if I manually activate the key after it is released (11 PM PST/2 PM EST), it will count as a pre-order?? That's why I doubt it.

I got a key as well and this key did not only contain Western Front Armies, but also the DLC stuff. I'd assume that's the same with the GMG keys.

Not GMC: I ordered from amazon and the queue says that I will get an email the second it is released.

Most key sites tell you if it is with or without preorder boni. If the site said you get Preorderboni, it doesn't matter when you activate the key. If it said without Preorderboni than it doesn't matter either^^
I play mostly 1v1 and my post are with 1v1 in mind.

GMG gets the preorder bonuses. I can confirm that. I just activated my GMG pre-order key, and the pre-order bonuses are now in with the rest of the DLC. Check on the Properties menu in your Steam library, DLC tab.
