The only stats I could find was the tank destroyer DPS is 240, but whats the DPS when the Armour piercing ability is activated?

That's not the DPS of the tank, that's how much damage it does per shot. And that does do much more damage than most other tanks (the Sherman and P4, for example, both do 160 damage per shot).
Anyways, the HVAP Rounds simply grants increased penetration, nothing more, nothing less.
It *technically* increases DPS against heavily armored targets because you'll penetrate more often, but it's not a direct DPS increase like more damage per shot or a faster rate of fire.
