It's the way replays work, it puts all the commands the players make into the engine, and the engine simulates it again.
It can be done forwards and at different speeds, but not in reverse, they'd have to reverse engineer the entire engine, it's not possible.
Fun fact no two simulations when watching a replay are ever quite the same.

The replays turning out different each time I suppose is due to things like rag doll physics and vehicle explosions having different animation effects randomly generated.

Yes exactly but if you change something like atmospheric presets you can get sync errors causing the commands to go out of order, and the game to turn out differently, I made a 45 minute cast and couldn't work out why it was GG... the player commented and I privated the cast. It was bizarre.
In terms of the average replays you are right, it's the rag doll physics etc. that is different in each replay viewing.
